This tropical twist on Green Jell-O blends lime gelatin with coconut milk, fresh lime zest, pineapple, and carrots for a bright, sweet-savory dessert. Chilled until firm, it jiggles with island flavor.

Ingredients

  • 1 package lime gelatin
  • 1 cup boiling water
  • 1 cup cold water
  • 0.50 cup pineapple juice
  • 0.50 cup coconut milk
  • 2 satchels 1 lime, zested
  • 1 cup pineapple tidbits, drained
  • 0.50 cup shredded carrot

Steps

  1. Sprinkle gelatin over boiling water; let bloom 1 minute, then stir until dissolved.
  2. Stir in cold water, pineapple juice, coconut milk, and lime zest.
  3. Fold in pineapple tidbits and shredded carrot.
  4. Pour into a lightly greased mold or dish.
  5. Refrigerate uncovered until set, about 240 minutes, then unmold and serve.
